Dijon-Tarragon Cream Chicken Samarra: Prep time: about 45 minutes
1 tablespoon butter
1 tablespoon olive oil
4 skinless boneless chicken breast halves
salt and pepper to taste
1/2 cup heavy cream
1 tablespoon Dijon mustard
2 teaspons chopped fresh tarragon
DIRECTIONS
Melt the butter and heat the oil in a skillet over medium-high heat. Season chicken with salt and pepper and place in skillet. Brown on both sides. Reduce heat to medium, cover and continue cooking 15 minutes or until chicken juices run clear. Set aside and keep warm
Stir cream into the pan, scraping up brown bits.
Mix in mustard and tarragon. Cook and stir 5 minutes, or until thickened. Return chicken to skillet to coat with sauce, Drizzle chicken with remaing sauce to serve.
Serve with fettucine, egg noodles or rice.

The recipe sounds great! I wonder how it would taste to substitute a low-fat cream of chicken or cream of mushroom soup for the heavy cream. I try to watch my cholesterol. :o
